1. Flavonoids
The content of flavonoids in mulberry leaves accounts for 1%~3% of the dry weight of mulberry leaves. It is a kind of plant with high content of stems and leaves in the plant kingdom. Korean and Japanese scholars have isolated nine types of flavonoids from mulberry leaves, mainly rutin, quercetin, isoquercitrin, quercetin-3-triglucoside and other compounds.
2. Alkaloids
Alkaloids are the main active ingredients of mulberry leaves. Japanese scholar Asano et al. (1994) isolated a number of polyhydroxyalkaloids from mulberry leaves, including DNJ (1-deoxynojirimycin) and N-methyl-1-DNJ ( N-Me-DNJ), 2-oxo-α-D-galactopyranoside 1-DNJ, fagomine, 1,4-dideoxy-1,4-imino-D-arabinitol, 1,4 -dideoxy-1,4-imino-(2-oxo-β-D-glucopyranoside)-D-arabinitol and 1α,2β,3α,4β-tetrahydroxy-noradolide (go to Alkaloids) 7 kinds of alkaloids. Among them, DNJ (1-deoxynojirimycin) is unique to mulberry leaves in the plant kingdom.
3, Phytosterols
The phytosterol content in mulberry leaves is 3 to 4 times higher than that of normal plants. It is mainly β-sitosterol, Stigmasterol, Camposterol, β-sitolsterol β-D-glucoside, and hopsolehol ( Lupeol, Myoinositol, Insect Allosterone, Inokosterone, Ecdysterone, etc.
4. Gamma-aminobutyric acid
The rich gamma-aminobutyric acid (average content of 226 mg/100 g) in mulberry leaves is remarkable, gamma-aminobutyric acid is transformed from glutamic acid, and the gamma-glutamic acid content in mulberry leaves is the highest (2323 mg /100g).
5. Mulberry polysaccharide
Mulberry leaves are rich in mulberry polysaccharides and have significant hypoglycemic and anti-hyperlipidemic effects (Chen Fujun et al., 1996).
